This chicken and chorizo stew is heavily based on my Father-in-law’s recipe.
He’s an awesome cook, and makes this fabulous stew with chicken, chorizo and paprika. It’s one of my fiance’s favourites so I had to try to create it at home to keep him happy!
This is my version of the stew, it can be cooked on the hob, or in the oven (it usually depends on how many other things I have to do around the house).
The photos shown are the oven cooked version. I’d say if you’re cooking it in the oven it will probably need thickening with a little cornflour but on the hob it reduces well on its own.
It’s fresh, tasty and easy to freeze so a handy one to keep in the freezer too.
And that’s it! So simple! If it’s not thick enough for you, add the cornflour as suggested and mix in, make sure the stew isn’t too hot or the cornflour will go lumpy.
This chicken and chorizo stew is perfect served with crusty bread.
