EASY PICNIC RECIPES IN THE CLEARLY LOCK & LOCK FOOD CONTAINERS MADE WITH EASTMAN TRITAN™ COPOLYESTER

I'm really excited to partner with Eastman and Lock & Lock to bring you recipes that go perfectly with their food containers, which I have been trying over the past few months.

As it is Summer I thought it best to start with some easy Summer salads. 

There is nothing better than coming home from a day at work, and going on a spontaneous evening picnic to make the most of the evening sun. Especially if you've been cooped up in an office all day.

What you need are quick and easy ideas that you can rustle up straight away, so that you can make the most of the weather!

I have come up with 3 simple salads that are really easy to put together in just 10 minutes before you run out the door.

The Clearly Lock & Lock containers made with Eastman Tritan™ copolyester not only look good, but they have a food safe silicone seal too, so are air and water tight. Perfect for putting in your picnic basket.

Easy Caprese Picnic Salad

The perfect combination of tomatoes, bazil and mozzarella in a simple picnic salad.

Ingredients

  • 1 pack of Mozzarella Pearls 125g
  • 2 tablespoons Basil Oil
  • 100g of cherry tomatoes on the vine
  • 50g Cucumber
  • pinch of salt and pepper

Method

  1. If you don't already have basil oil, take 1 bunch of basil (including the stalks) and blend with approx 200ml of extra virgin olive oil. I keep this in the fridge for up to a month, it will solidify in the fridge but when left out at room temperature for 5 minutes it goes back to an oil .
  2. Slice the tomatoes into quarters, and finely slice your cucumber
  3. Add the tomatoes, cucumber and mozarella pearls (drained) into your food container (I used the Clearly Lock & Lock food storage container made with Tritan™).
  4. Drizzle 2 tablespoons of basil oil over the salad, and season with a pinch of salt and pepper.
  5. Place in your picnic basket with an ice pack to keep it cool.

Easy Cheese and Apple picnic salad

Sharp tangy cheddar cheese goes perfectly with sweet apples, add some peppery radishes too and you have a perfect combination for a tasty picnic snack.

Ingredients

  • 200g good quality mature cheddar
  • 1 medium sized sweet apple, like Pink Lady
  • 2 salad radishes
  • 50g cucumber
  • 1 lemon

Method

  1. Dice the cheese into small bite size chunks.
  2. Core and dice the apple into bite size chunks, leaving the skin on.
  3. Squeeze the juice of the lemon over the apple and mix well in a bowl to make sure all the cubes are covered.
  4. Finely dice the cucumber into bitesize chunks.
  5. Finely slice the radishes, ideally with a mandolin.
  6. Mix all the ingredients together in your food container (I used the Clearly Lock & Lock food storage container made with Tritan™).
  7. Place in your picnic basket with an ice pack to keep it cool.

Sweet Simple Pineapple and coconut picnic salad

An easy idea for serving pineapple, perfect for a snack or a sweet treat at a picnic

Ingredients

  • 1 small ripe pineapple or 1/2 large ripe pineapple
  • 1 tablespoon desiccated coconut
  • 1 tablespoon golden syrup

Method

  1. Peel, and core the pineapple and cut into bitesize chunks.
  2. Lightly toast the coconut in a dry frying pan for 5 minutes or until just turning golden.
  3. Place the pineapple in your food container (I used the Clearly Lock & Lock food storage container made with Tritan™) and sprinkle the toasted coconut and golden syrup on top.
  4. Try to resist the urge to eat it straight away, and place in your picnic basket for later.

Why I loved using Clearly Lock & Lock Food Containers made with Tritan™

I was sent some Clearly Lock & Lock food containers made with Tritan™ for the purpose of writing this post and creating some sponsored recipes.

Having a background in optics meant I had some knowledge of Tritan as it is also used in safety and leisure products and infant care sometimes. Tritan is found in many consumer durable goods, such as a blenders, choppers, hydration bottles, drink ware, or serving dishes.

This makes it an excellent choice for food containers too, as it is really tough so you don't have to worry about the containers breaking or cracking when you're travelling with them, whether it is for a picnic or a work lunch.

Tritan is a BPA-free plastic, which makes the Clearly Lock & Lock products safe.These containers are suitable for microwave use to reheat your food, they are dishwasher and freezer safe and also stain resistant. I will be putting this to the test with some tomato based recipes coming up shortly too.

The food safe silicone seal around the top makes sure the container is air and water tight. This stops leakages, and also keeps the food really fresh too.

The design is nice and smooth with curved edges, so they feel good to use and you could even eat straight out of the container. The locks are also really easy to use and not too stiff or bulky.

Although they are suitable for microwave use, this is for reheating only and not for cooking. So extremes of temperature in the microwave should be avoided.
