Easy Tomato Bruschetta

This tomato bruschetta recipe is so incredibly easy and quick to make. It’s fresh and full of flavour too.

I have made this for friends who have come over for a meal, and it has always gone down well. So this could easily be made as a simple starter when entertaining. There is also nothing wrong with having it for lunch too!

Ingredients

  • 4 thick slices of good quality sourdough bread
  • 12 cherry tomatoes on the vine
  • 1 tablespoon garlic oil
  • 1 garlic clove (see notes above if you don’t have it)
  • 2 teaspoons truffle oil
  • 4 small pinches of good quality salt (1 per bruschetta)
  • Basil oil – (1 bunch of basil blended with 150ml olive oil) or you can use pesto
  • 1 banana shallot finely sliced
  • (optional – pearl mozarella balls 3-4 per bruschetta)

Method

  1. Cut the cherry tomatoes into quarters.
  2. Finely slice the shallot as thin as you can.
  3. Mix the tomatoes, onion, garlic and truffle oil together, and mozarella if adding.
  4. Lightly toast the bread.
  5. Once toasted rub one side with the garlic clove (cut in half so the juices spread onto the bread better).
  6. Seperate the tomato mixture between the slices of bread, neatly arranging them on top.
  7. Sprinkle a little salt on each bruschetta (do this last to stop the salt drawing the water out of the tomatoes).
  8. Drizzle the a few drops of basil oil and a few small basil leaves on top of each bruschetta
