Oaty Cinnamon and Raisin Muffins

3 things I love, oats, cinnamon and raisins. Especially when they come combined in a tasty muffin.

This  muffin recipe sees oats mixed in with sour cream and flour to make moist, delicious muffins.

Perfect for any time of day, I enjoyed them for breakfast, or with an afternoon cup of tea.

I love making them in these bright yellow cupcake cases, it makes me think of spring!

Serves: 12
  • 75g Oats
  • 150ml sour cream
  • 100ml whole milk
  • 125g dark brown sugar
  • 100ml vegetable oil
  • 50g butter (room temperature)
  • 2 eggs
  • 2 tspn cinnamon
  • 200g self raising flour
  • 100g Californian seedless raisins
  • A handful of oats (to garnish- roughly 1 pinch per cupcake)
  1. Mix the sour cream and milk together in a large bowl, measure out the oats and allow to soak at room temperature, for 30 minutes.
  2. Whisk the sugar with the oil and butter on a high level until pale and creamy.
  3. Add the eggs to the sugar mixture and whisk well again.
  4. Gently add the soaked oats to the sugar mixture, and fold in until all combined.
  5. Sift the flour, and cinnamon into the wet mix and fold in well.
  6. Add the raisins and stir until evenly distributed.
  7. Spoon into cupcake cases, and fill to ⅔ full.
  8. Place in the oven at 175'C for 20-30 minutes until raised and golden.
  9. Sprinkle a few oats on top for decoration.
