We love eating this spicy chicken casserole at home for a number of reasons; it uses our favourite jerk paste, I can put my feet up while it’s cooking, it’s really healthy and most importantly, it tastes really good!
I usually make this with whole chicken breasts, but they can be substituted for chicken thighs too.
If you want to reduce the cooking time you can dice the chicken first and cook for 30-40 minutes instead of the hour.
My favourite way to serve it is to portion it up into individual casserole dishes, sprinkle with a handful of mozarella cheese and put under the grill until golden. It is so good!
Taking to work the next day
It saves really well too, so can be frozen or reheated well.
We usually portion up a work lunch out of it too and take it to work in a sealed container. I have never had an issue with reheating rice, although you do need to be careful to make sure you reheat it fully.
