Spicy Chicken Casserole

We love eating this spicy chicken casserole at home for a number of reasons; it uses our favourite jerk paste, I can put my feet up while it’s cooking, it’s really healthy and most importantly, it tastes really good!

Notes on the Recipe

Ingredients

  • 4 chicken breasts
  • 2 bell peppers (any colour)
  • 1 large cooking onion
  • 2 tins chopped tomatoes
  • 1 cube of chicken stock
  • 250ml water
  • 1 teaspoon Dunns river Jamaican jerk paste
  • generous pinch of salt
  • (Optional: serve with a portion of boiled rice, a broccoli florets and a handful of mozarella cheese sprinkled on top)

Method

  1. Place the chicken into a large casserole dish.
  2. Dice the peppers and onion and add to the dish.
  3. Add the chopped tomatoes and water and crush the stock cube into the dish.
  4. Add the jerk paste and salt.
  5. Stir together well.
  6. Place in the oven on 160'C for an hour.
  7. Serve and enjoy!

Recreating a Turkish Chicken Casserole

The recipe came about because I loved eating the tourist friendly chicken casserole when on holiday in Turkey. It would come as a lightly spiced chicken casserole, with tomatoes and vegetables, topped with cheese and served with a little dome of mixed wild and white rice.

I loved it, and practically lived off it every holiday.

I had been trying to recreate it at home but could never quite get the spices or consistency right.

The second development in the recipe came when we had a jar of our favourite jerk paste to use up.

We absolutely love Dunn’s River Jamaican Jerk paste, it is fiery hot and tangy and just tastes so good on chicken. We regularly buy a jar of it, but because it’s quite spicy the jar lasts a long time!

I had a little bit of a jar just sitting there so decided to put some in my chicken casserole one night, and was so pleased with the results I am still making it regularly 8 years on.​

Perfect to Cook After a Busy Day

This recipe is one of my favourites to make when I get in from work because I can pop everything into the casserole dish easily while still in my work clothes.

I can then make myself a cup of tea, get changed into more comfortable clothes and unwind for an hour and then it’s ready, no fuss.

It is essentially just chicken, vegetables and tinned tomatoes so really healthy too.

I serve it with basmati rice and green vegetables, but you could also serve it with boiled potatoes too for another healthy twist.

You can also make this a little more indulgent as I regularly serve it with melted grated mozzarella on top, or with a portion of potato wedges.
